Abstract: Guidelines to providing a nutritious Type A school lunch in limited facilities (such as one-room school) are outlined. Information is given about planning equipment purchases, placement of equipment for lunch preparatio, sanitation, maintenance, storage and lighting. Various diagrams are included depicting floor plans, cabinets, sink and drainage and equipment placement based upon the number of students being served and the size of the school.
